Banderas. It means flag. The colors are green, white and orange. What did I do with it? Drink it, of course!

1.    Banderas: This has to be the best trio of tequila shots in the world. They give you limes and salt with it, and as you approach the last one, you already begin asking for more.  The red one is like a bloody Mary, but better than anything you’d ever taste, it’s called Sangrita. Spicy salsa with tequila, a taste so yummy that you forget it’s laced with tequila. Then the blanco or the plain silver tequila and the green one is  lime juice. I lost count of how many I had, followed by spicy tacos and another round of Banderas. I wish the following day had not been a Friday, and I wish I had stopped at a decent number. Of course I had the worst mix of hangover and work pressure you can imagine!

2.    Tacos Al Pastor: I have NEVER EVER had such mind numbingly delicious tacos anywhere in     the world. Even Los Angeles cannot compare! And don’t forget to squeeze that lemon wedge they give you for that extra zing.

3.    Mole: Chicken cheese enchiladas smothered in mole sauce, a sweet-spicy brown sauce made with chocolate.  I had to order this entrée and try the variations with different kinds of preparations.

4.    Nopales: This is the pulp of cactus and has various varieties. The one I had was light green in color and a jelly like pulp, a fresh and refreshing tint of sweetness to it with some chewy seeds. It was definitely not my favorite, but worth a try.

5.    Chilaquiles: Try and try till you succeed. I love ordering this sumptuous breakfast, but I am never able to finish it. Fresh scrambled eggs served with fried tortillas, cheese and cream with a side of avocado (optional), and topped with a spicy salsa. At times, I felt like it is an entire day’s meal rolled into one, but it’s okay to indulge your gluttony once in a while, right?

6.    Flan : The Mexicano version is very different from its English cousin. It is a baked caramel custard and I love jiggling it with a spoon when it arrives and then it dances like jelly. So do leave some space for dessert as this is a MUST try.

7.    Guacamole: After a heavy breakfast or lunch, when I couldn’t muster the courage to order another meal, I got some Chicken Tortilla soup followed by tortilla chips and Guacamole. Given a chance, I would eat avocados all day, they are just so fresh and pulpy in Mexico, it’s hard to resist.

This is definitely not an exhaustive list, I tried to wrap up my top 7. There were others like Tamales, Enchiladas, Tostadas and chilled humungous glasses of margarita which didn’t even fit into my palms!  Also, be mindful of the spice! It can get really, really hot.

Also don’t forget to get a bottle of perfectly aged gold tequila, my favorites are Jose Cuervo and Don Julio. Or try the Reposado Tequila, which is aged in white oak casks from 2 months to a year. If you haven't tried these, you haven't even scratched the surface with real tequila. I also tried Mezcal in one of the restaurants and loved it. But I had no idea how to buy one, so the bottle I got was a disappointment and it still lying around almost full. And if I am inclined to go to Mexico again soon, food is going to be a big part of my decision! Provecho amigo!
